Happy Call Pan Cheesy Chicken Wrap

This dish is the fav boy's recipe that he whipped up from watching Gordon Ramsay's video.
We cooked this for 21 people last Friday! 
He modified the original recipe and so, I'm here to share his recipe (:
This dish is relatively simple to prepare and it's yummy.. it's also pretty filling!
This recipe takes 1.5 hours and it yields 16 wraps.


Happy Call Pan Cheesy Chicken Wrap Recipe
Ingredients: 

2 kg of Chicken Thigh (I used frozen chicken thighs)
Oregano (Mine's from McCormick)
Black Pepper
Salt
300g Plain Flour
4 Eggs
300g Mixed Grated Cheese 
2 Tomatoes
1/2 Romaine Lettuce (8 leaves)
1 pack MISSON wraps, Original (8pcs)

Cooking Oil
Toothpicks


Steps: 

Defrost and clean 2kg of chicken thighs. 
De-bone the chicken thighs.
Pat dry the chicken thighs. 

The spices that I used for marinating the chicken.

 
Marinate the skin side of the chicken first.
Shower each chicken thigh with 2 - 3 dashes of oregano, some salt and some black pepper.
Massage the marinate into the chicken.

Marinate the other side of the chicken.
Shower each chicken thigh with 2 - 3 dashes of oregano, some salt and some black pepper.
Massage the marinate into the chicken.

Prepare the flour and egg wash.

Whisk the eggs.

Take a piece of chicken thigh and dip it into the egg wash.
Then, dip it into the flour.
Prepare only 6 at a time as the Happy Call Pan can only cook 6 chicken thighs at once. 
If you prepare the chicken way in advance, it will become soggy.

Heat up the Happy Call Pan with a shallow amount of oil.
Cook the chicken on low-medium fire.

Place the chicken thighs into the Happy Call Pan, flesh side down first.
Cook for 3 minutes before turning the chicken over.
Cook for 5 minutes on the skin side.

Flip the chicken back on the flesh side and cook for another 3 minutes.
The total cooking time should be about 10 minutes. 
You can check if the chicken has been thoroughly cooked with a toothpick.
It should come out clean.
Drain dry the chicken with kitchen towels.

Prepare the bowl of mixed cheese.

Preheat the oven to 250 degrees Celsius.
Scatter a generous amount of cheese on the chicken.
 Bake the chicken with cheese for 5 minutes or till' the cheese has completely melted.
I baked my chicken with cheese in the oven as I had too much to cook and only one Happy Call Pan!
Maybe it's time to get a new one! (:

If time permits, you can clean the Happy Call Pan first before 'grilling' the chicken and cheese on low fire for 5 minutes or till' the cheese has completely melted.

I cooked Vegetable Medley by boiling broccoli and baby carrots in water with some oil, sugar and salt.
This took about 10 minutes.
The broccoli will cook in about 5 minutes so do remove it first and allow the baby carrots to continue cooking.

Clean and tear the Romaine lettuce in 1/2. 
Tear the wrap into 1/2.
Slice the tomatoes.

Place the lettuce on the wrap first, followed by the tomato and the cheesy chicken.
Fold in the sides and secure with 2 tooth picks.

This is a relatively simple and fun dish and my family enjoyed it.
